Apple Cheesecake

... taste of sweet sourly green apples being captured in a cake...

 Softness of a cheesecake being blended together with the crunchiness of homemade biscuit base... just a perfect match with the sweet sourly taste of the green apples furnished with the sweetness aroma of cinnamon... Apple Cheesecake

~Apple Cheesecake Recipe ~

Biscuit base
200g superfine flour
50g castor sugar
140g butter
Blend all ingredients till crusty mixture is formed.  Pour crust into a 9" greased baking tin and press it evenly.  Use fork to poke holes on it and bake at 180° C for 25 minutes.  Set aside to cool off.

Apple filling
A
3 green apples sliced
1 tbsp butter
1 tbsp lemon juice
1 tbsp castor sugar
1 tsp cinnamon powder
B
1 tbsp corn flour
60ml water
Dissolved corn flour in water.
Mix A and cook over low heat till the apples softened. Pour in B, fold evenly and cook till its thick.  Set aside to cool off.  Spread the Apple filling on the made biscuit evenly.

Cheese filling
C
20g castor sugar
25g corn flour
1/4 tsp salt
250g cream cheese
D
30g whipped cream
2 grade A egg yolk 
Mix C well, add in D and beat at high speed till the mixture is light and thick. Set aside.

Meringue
2 grade A white egg
50g castor sugar
½ tsp cream of tartar
Mix all and beat at high speed till stiff peaks form.  Fold in the mixture with Cheese filling and gradually fold in batter evenly. Pour batter into the baking tin which has been filled with the apple filling. Spread batter evenly and steam bake at 150°C for 60 minutes. Decorate as desire and ready to be served.
